From Seed to Spice: My Aji Amarillo Journey Indoors 🌱🔥

My Aji Amarillo peppers are coming along beautifully indoors! I’ve been meaning to share my growing setup with you all for a while, but today I thought I’d show you the progress of the Aji Amarillo seeds I purchased a few weeks back.

I can’t remember the exact day I planted them, but just look at them now! Aji Amarillo is a staple in my Peruvian cooking, so I decided to grow my own with the hope of harvesting seeds and using a few pods for some favorite dishes.

For those of you familiar with growing peppers, you’ll notice these seedlings are looking fantastic—healthy, strong, and exactly the way I was hoping they’d turn out. Out of the eight seeds I started with, seven germinated successfully. A couple didn’t make it, so I now have five healthy seedlings to nurture. They’re just about to enter the vegetative stage—the phase of rapid growth—so I’m preparing for that transition. Since the leaves are getting closer to the lights, I’ll be gently training and bending the stems to make the most of the space and light coverage I have.

The flowering stage is still at least a month away, but with any luck, the plants may surprise us and start showing signs of it a little earlier. I'm glad to see the progress so far, so eventually I'll make another update once we're officially in the vegetative stage.
