If I have the financial resources to leave my country, Ireland is one of my choices. New Zealand is number 1. How's the size of government bureaucracy in Denmark? Is it getting bigger? How about taxation?

Stick with New Zeeland, stay out of Ireland.
Denmark has a large government, but very low corruption. Taxes are pretty high, but the return is that things like healthcare and secondary education are pretty much free (funded by taxes).
