Lorne sausage is a Scottish staple that stands apart from your typical links. Instead of being stuffed into casings, it’s formed into a block and sliced into square or rectangular pieces.
That alone changes the experience due to more surface area, better browning, and a texture that’s firmer yet slightly crumbly. It’s made from minced beef, sometimes blended with pork, and rusk!
They add salt and spices like black pepper, coriander, and occasionally nutmeg into the mix! That combination gives it a rich, savory flavor with just enough seasoning to stand on its own without being overpowering.
